Have you ever tried corn spoon bread? Or perhaps you know it as corn bread pudding? This delightful variation of cornbread adds more liquid for a very moist mix between corn bread and pudding – hence the name. You use a scoop to serve it. Don’t worry, it doesn’t actually feel like eating pudding, rather it is fully cooked with a softer consistency that scoops up beautifully. I use to get a version of this as our favorite Mexican restaurant. The full, rich flavor is so satisfying along with so many options from mexican food to any meat you can think of, bbq or even homemade baked beans! Yum! Our Jiffy corn bread pudding uses the conveninece of box, but I also share how to make it from scratch which I am sure is better for us with no preservatives! Our corn bread pudding recipe is so easy – just dump, mix, and cook! You will love how simple it is to make and how delicious it is too. Southern comfort food at its best!
Spoon bread recipe

- 1 box of Jiffy Corn Bread (or make your own!)
- 1 cup flour
- 1 cup cornmeal
- 2/3 cup white sugar
- 1 teaspoon salt
- 3 1/2 teaspoons baking powder
- 14.75 oz can creamed corn
- 15 oz can mexi-corn, drained
- 1/2 cups butter
- 1 cup sour cream (I always use Daisy)
- 3 large eggs
- 1/2 teaspoon salt
Cornbread Pudding Recipes
Preheat the oven to 375°F and lightly grease a 2-quart casserole dish with nonstick cooking spray. In a large bowl, combine the ingredients and mix well. Pour the mixture into the casserole dish. Bake 35 to 40 minutes, or until the spoon bread is golden brown and set. Scoop with ice cream scoop
Corn bread pudding
In a large bowl, combine the dry ingredients and mix well. You can either use a convenient Jiffy muffin mix box, or make your own using the flour, cornmeal, sugar, salt, and bakng powder listed above.
Corn bread pudding recipe
Dump in cans of creamed corn and drained mexi-corn. Add metled butter, sour cream, and eggs. Stir until combined, but don’t over mix.
Cornbread pudding
Pour into prepared casserole dish or 9 x 13 pan.

Bake at 375 F for 35 to 40 minutes, or until the spoon bread is golden brown and set.

- 15 ounces Mexi-corn, drained
