Simple Egg Noodle Pasta Recipe

There are tons of pasta recipes out there. But if you are just trying your hand at homemade pasta here is a simple egg noodle pasta recipe.

try semolina flour to give your pasta an authentic taste

I mixed mine in a bread machine because it was handy. But you could easily just throw your ingredients in a mixer.

  • 4 eggs, lightly beaten
  • 4 TAB warm water
  • 1 TAB olive oil
  • 2 cups all purpose flour
  • 1 cup semolina flour (for the authentic Italian taste)

If you are using a breach machine just select dough cycle and press start. Set a time for 10 minutes. (this dough is not suitable for a delay timer)

wrap your dough and let it rest

Form the dough into a ball and wrap in plastic wrap. Let rest at room temperature for 30 minutes.
HINT:  The dough can also be refrigerated for up to 3 days.

Shaping Homemade Pasta

Making homemade pasta is easy with a pasta maker or by hand

To roll out your pasta you have a couple choices. Your can use a rolling pin and pizza slicer to cut pasta by hand on a floured surface. Or you can use a kitchen gadget to speed up the process and get more uniform pasta by using a hand crank pasta maker or  Kitchen Aid Pasta Maker (we have the food grinder with pasta plates).

Pick the size pasta you want and get started. This actually goes really quickly.
The recipe makes enough pasta for 8 servings. So depending on the size of your family you may just keep 1/2 the ball in the refrigerator to make pasta for a dinner tomorrow.

Dry Your Pasta

dry your pasta

You can dry your pasta by laying it on a clean counter or surface covered with parchment paper or using a pasta drying rack.

Let the pasta air dry at least 20 minutes before cooking or freezing.
