Ingredients

  • 2 ripe bananas, smashed
  • 1 cup oatmeal (quick oats)
  • 1 cup all purpose flour
  • 1/4 cup brown sugar, packed
  • 2 teaspoon baking powder  
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 2 large eggs
  • 3/4 cup plain yogurt
  • 1 teaspoon vanilla extract
  • 1/4 cup vegetable oil
  • 1 cup pecans, chopped

Instructions

  • Whisk together milk, eggs, vanilla, oil, and yogurt. Then add in remaining ingredients. Pour pancakes onto a hot griddle. Serve with maple syrup and whipped cream.
