I love gardening and eagerly look forward to fresh product from my own backyard garden! One of my favorite ways to use our juicy, plump tomatoes and jalapeno peppers is withย homemade salsa recipes! This funย pineapple salsa recipe combines sweet and heat (or as much heat as you care to add) for a truly tantelizing taste that will make your taste buds dance! This yummyย pineapple pico de gallo uses jalapenos to give it just enough zip to deepen the flavor and play against the sweet pineapple. We use this stuff by the cup full all summer long, but my favorite way to enjoy it is on my husband’s leftover smoked pulled pork and we make carnitas withย pineapple jalapeno salsa! Yummy just doesn’t cover how good it is!
Pineapple pico de gallo
This recipe is super flexible to make with garden fresh varieties or store bought fruits and vegetables:ย Jump to Recipe
- 4-5 large Roma type tomatoes, havled
- 1 cup large sweet onion chopped
- 2 cup crushed pineapple
- 1/2 cup jalapenos, halved
- 1 chipotle in adobo sauce
- 1/2 cup cilantro, chopped
- 3 cloves garlic, minced
- 1/4 cup lime juice
- dash salt or to taste

While I could chop everyting by hand, I am a busy mama so I find and take shortcuts every chance I get! Throw the tomatoes and onion in the food processor and turn on until chopped. Add remaining ingredients and pulse to chop and combine.

Homemade Pinneapple Jalapeno Pico de Gallo Salsa
Ingredients
- 4-5 large Roma type tomatoes, havled
- 1 cup sweet onion, copped
- 2 cups pineapple crushed
- 1/2 cup adobo sauce
- 1/2 cup jalapenos reomve seeds to make it less spicy
- 1/2 cup cilantro, chopped
- 3 cloves garlic, chopped
- 1/4 cup lime juice
- 1 dash salt or to taste
