  • throw a couple extra chicken breasts on for dinner the previous day and reserve them

Ingredients
  

  • 4 cups chicken, cooked and cubed

  • 1 teaspoon paprika
  • 1 1/2 cup dried cranberries

Instructions
 

  • In a medium bowl mix together the mayonnaise, paprika saltm and pepper. Add in chicken, dried cranberries, celery, bell pepper, green onions, and pecans. Mix well and chill for 1 hour to blend flavors. Serve on a leaf of lettuce or on a croissant.
