I know that split pea and ham is all the rage, but honestly I never liked that ham soup! It felt like a mushy green soup that looked, well, let’s just say unapetizing. So when I was looking for a soup made from ham bone I wanted something delicious, without peas! This hambone soup recipe is filled with hearty potatoes, carrots, corn, white kidney beans, and of course ham! My kids love this leftover hambone soup and it has a way of warming me down to my toes when we have it for lunch or a quick dinner. To make this yummy ham and potato soup with your leftover ham bone, all you need are a few common ingredients you probabaly already have in your pantry:
- 1 leftover hambone (if you don’t have a ham bone, just use chicken broth)
- 1 tablespoon olive oil
- 2 Tablespoons butter
- 4 cloves garlic, minced
- 1 onion, diced
- 1 cup carrots, peeled and diced
- 2 celery ribs, diced
- 3-4 large russet potato, peeled and diced
- 2 cans pinto bean (white kidney beans are good too), drained and rinsed
- 1/2 cup white cooking wine
- 1/4 cup heavy cream
- 2 cups spinach
- 1 teaspoon Worcestershire sauce
- 1 teaspoon hot sauce
- 1 teaspoon basil
- 1 teaspoon oregano
- 1 teaspoon parsley
- 1 teaspoon ground mustard powder
- 1/4 teaspoon ground sage
- 1/4 teaspoon black pepper
- 2 1/2+ cups leftover diced ham

If you are using a ham bone, start by making the broth. Again, this is optional and you can make a delicious ham soup using chicken broth!
Start by covering your leftover hambone with 6-8 cups of water in a large stockpot. You want to bring the water to a boil then reduce it to simmer for about 1 hour.
This allows you to flavor your water with all the yummy ham bone flavor and nutrients. Remove and discard the hambone while leaving your pot of water on the stovetop over medium heat.

In a skillet, heat olive oil over medium heat. Add in chopped ham for 1-2 minutes to make it slightly golden. Remove the ham and set it aside.
Add cooking wine and set the heat at medium,; use a spatula to “clean” the bottom and sides of the pan. Now add butter and chopped garlic and cook for 1 minute.
Add the diced onion, carrots, potato, and celery. Cook for 6-10 minutes or until semi-soft.

Ingredients
- 1 hambone or 6-8 cups chicken broth
- 1 Tablespoon olive oil
- 2 Tablespoon butter
- 1/2 cup dry white wine
- 4 cloves garlic minced
- 1 large onion chipped
- 2 ribs celery diced
- 3-4 large russett potatoes peeled, and cubed
- 1 cup carrots peeled and diced
- 2 cans pinto beans or white kidney beans drained and rinsed
- 1-2 teaspoons Worcestershire sauce
- 1-2 teaspoons hot sauce
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 teaspoon parsley
- 1 teaspoon ground mustard
- 1/4 teaspoon ground sage
- 1/4 teaspoon pepper
- 1/4 cup heavy cream
- 2 cups spinach
Instructions
- In a large stockpot put leftover hambone covered with 8 cups of water. Bring the water to a boil then reduce and simmer for 1 hour. Remove the hambone.OR you can just use 6-8 cups canned check stock.
- Heat olive oil in larte pot over medium heat. Add the diced ham and cook until golden. Remove the ham and set aside.
- Add cooking wine and cook over medium heat as you use the spatula to scrape pieces from the side and bottom of the pan.
- Add butter, chopped garlic, and onion. Cook, stirring occasionally, until onions have become translucent, about 2-3 minutes.
- Add onions, carrots, celery, and potatoes. Stir and cook for 8-10 minutes or until they start to get soft.
- Add Worcestershire sauce, hot sauce, and seasonings.
- Add 6-8 cups broth, beans, and potatoes and cook over medium heat for 20 minutes, or until the flavors have meshed and the potatoes are fork tender.
- Add spinach and heavy cream. Cover and cook for 3-5 minutes or until spinach has wilted slightly.
- Serve with crusty bread. Refrigerate any leftovers.
