There’s something undeniably delightful about crepes — they’re thin, light, and incredibly versatile, making them the perfect canvas for a variety of fillings. Whether you’re a breakfast lover, a dessert enthusiast, or someone who enjoys savory dishes, crepes have got you covered!
Let me introduce you to our family favorite crepe recipe that’s super simple to make and guarantees delicious results every time. With just a handful of ingredients, you’ll be whipping up a batch of these delightful pancakes in no time!
Ingredients for crepes
All you need to make crepes are a couple simple ingredients you probably have on hand:
- butter
- flour
- sugar
- salt
- egg
- milk
- vanilla extract
Best Crepe Recipe
In a medium bowl, mix together the crepes:
- 3 Tablespoons melted butter
- 1 cup flour
- 3 Tablespoons granulated sugar (I like to use the fine granules)
- ½ teas salt
- 2 egg
- 1½ cups milk (I use whole organic milk)
- 1 teas vanilla extract
Cover with plastic and set aside for 30-45 minutes to make sure your crepes are light and airy.
How to make crepes
Spray your non-stick skillet with butter spray like Pam. Over medium heat put 3 Tablespoons of your batter in the middle.
How do you make crepes
Right away start moving your pan so the batter covers more of your pan in every direction. You want to make a small, even coat. It will take a couple seconds. (Hint: These look like super thin pancakes).
Cook for 15 seconds.
Crepes from Scratch
Use a spatulat to carefully flip your crepe over and cook for another 10 seconds.
Homemade Crepes
Continue making crepes until your batter is gone. I just put my crepes one on top of the other on a plate.
This recipe generally makes 20-30 crepes.
Crepe filling
The best part about crepes is how versatile they are. The same base recipe works to hold a wide variety of fillings! Simply take one crepe and put the filling in the center then roll up or fold into fourths.
Here are some of our favorites:
Almond Cream Crepes
Mix together the creme filling:
- 1/3 cup sugar
- 3 Tablespoons flour
- 2/3 cup milk
- 1 egg & 1 egg yolk (add later)
- 1 Tablespoon butter
- 1 teas vanilla (add later)
- ¼ teas almond extract (add later)
- ¼ sliced or slivered almonds (add later)
Once you’ve made the crepes, pour the creme filling in the skillet. Cook over medium heat, while stirring, until thickened and begining to bubble. Cook 1-2 minutes longer. Add egg & mix quickly over low heat for 2 minutes (do not boil). Remove from heat and add vanilla and almond extracts. Serve 2 teaspoons in each crepe. Top with almonds.
Peach Crepes
This healthy option is light and fresh and perfect for fresh peaches in the summer!
- 1 ½ cup cottage cheese
- ¼ cup chopped peaches
- 2 Tablespoons sugar
- 1 Tablespoons orange marmalade
- ¼ teas vanilla
- ½ cup vanilla yogurt
- 1 Tablespoons honey
- 2 fresh peaches, sliced
Combine cottage cheese, ¼ cup peaches, sugar, marmalade, and vanilla. Spoon 3 TAB filing down center. Combine remaining ingredients for sauce over crepes. Top with sliced peaches.
Sausage, Apple, and Cinnamon crepes
This savory filling always leaves me satisfied! It is especially yummy in the fall.
- 4 pre-cooked sausage links
- 3 medium apples
- 1/4 cup water
- 2 Tablespoon brown sugar
- 1/2 teaspoon cinnamon.
In a skillet over medium heat melt butter & cook cut apples 5-7 minutes or until tender-crisp, stirring occasionally. Stir in sliced, pre-cooked sausage links, sugar, water, and cinnamon. Put 2 Tablespoons of mixture in each crepe.
Nutella and Strawberry Crepes
Spread a generous layer of Nutella on one half of each crepe, then sprinkle with fresh strawberry slices. Fold or roll the crepe and serve with a dollop of whipped cream on top if desired.
Nutella and Banana Crepes
Start by spreading a luscious layer of Nutella on one half of each crepe. Next, add some delightful sliced bananas for that perfect touch of sweetness. Fold or roll your crepe, and for an extra treat, top it off with a dollop of fluffy whipped cream.
Banana and Carmel
Lay a crepe flat on a plate, layer it with banana slices, and drizzle generously with caramel sauce. Fold it in half or roll it up, then top with more banana, caramel, and a dollop of whipped cream or a sprinkle of powdered sugar if desired.
Strawberry and cream crepes
Fill center of crepes with whipped cream or cool whipe. Top with slices of strawberries. Roll the crepe and top with additional whipped topping and strawberries if desired.
Peanut Butter and Banana
Spread a tablespoon of peanut butter across each crepe, then add banana slices on top. Fold or roll them up! Drizzle with maple syrup or honey if desired.
Ham and Cheese
THese crepes are made in the skillet so the meat is warm and the cheese is goey! For each crepe, place slices of ham and a generous sprinkle of cheese on one half. Fold the crepe over and allow it to heat for an extra minute to melt the cheese.
Crepes for breakfast
Serve 2-3 crepes per plate and you have a yummy breakfast!
