As I experimented with different ingredients and techniques, I started to envision what my ideal version would be. One thing was for sure: I didn’t want to use Velveeta. While it may be convenient, its unnatural qualities and processed taste didn’t sit well with me. Instead, I focused on wholesome ingredients that would not only taste great but also be comforting and satisfying.

All you need to whip up a kettle of cheeseburger soup are a few ingredients:

• onion

• carrots

• celery

• basil

• parsley flakes

• butter

• chicken broth

• potatoes

• all pupose flour

• cheddar cheese

• milk

• salt

• pepper

• sour cream

• bacon

• ketchup
• mustard
• bread and butter pickles

Start by browning the ground beef in a 3-quart saucepan. Once it’s cooked to perfection, make sure to drain off any excess fat and set it aside in bowl for later.

In the same saucepan, melt 1 tablespoon of butter, then toss in some diced onion, shredded carrots, parsley flakes, basil, and celery. Sauté until everything is tender and fragrant. Remove and put in bowl with meat for later.

Melt the remaining 3 tablespoons of butter in a pan, then whisk in the flour. Keep stirring for about 3 to 5 minutes until the mixture is bubbly and golden!

• 1/2 teaspoon freshley ground pepper
