Creamy Bacon Cheeseburger Soup with Potatoes Recipe

Ingredients
1lbground beef
3/4cupchopped onion
3/4cupshredded carrots
3/4cupdiced celery
1teaspoondried basil
1teaspoondried parsley flakes
4Tablespoonsbuter
4Tablespoonsall purpose flour
3cupschicken broth
4cupspotatoes, peeled and dicedTo save time I use frozen o'brien potatoes that have been thawed.
2cupscheddar cheese, shredded
1 1/2cupsmilk
3/4teaspoonsalt
1/2teaspoonfreshley ground pepper
1/4cupsour cream
bread and butter picklesgarnish
ketchup & mustardgarnish
bacon, cookedgarnish
Instructions
Start by browning the ground beef in a 3-quart saucepan. Once it’s cooked to perfection, make sure to drain off any excess fat and set it aside in bowl for later
In the same saucepan, melt 1 tablespoon of butter, then toss in some diced onion, shredded carrots, parsley flakes, basil, and celery. Sauté until everything is tender and fragrant. Remove and put in bowl with meat for later
Melt the remaining 3 tablespoons of butter in a pan, then whisk in the flour. Keep stirring for about 3 to 5 minutes until the mixture is bubbly and golden!HINT: This is the rue that will thicken up the soup!
Start by whisking the broth into the flour until it’s completely smooth and free of clumps. Next, toss in those diced potatoes, cooked veggies, and ground beef. Bring the mixture to a hearty boil, then reduce the heat, cover it up, and let it simmer for 10-12 minutes until the potatoes are perfectly tender.
Stir in sthe shredded cheese, milk, and salt and pepper. Keep cooking and stirring until it melts and incorporates.
Take it off the heat and stir in the sour cream for a creamy finish!
Drizzle ketchup and mustard, add 2 bread and butter pickles, and top with a some cooked, chopped bacon. I know it sounds weird to add the ketchup and mustard, but trust me – it tastes AMAZING!
