Apple Carrot Cupcakes
These super moist apple carrot cupcakes are fill with not only lots of flavor, but nutritious apples and carrots. The apple cupcakes recipe makes a super satisfying apple dessert that is moist and well balanced. While you can eat them as apple carrot muffins for a yummy breakfast recipe, we prefer to use them as a base for filled cupcake recipes. We make our carmel filling recipe to insert in the center of the cooked apple cupcake recipe and top with a light mascarpone frosting recipe. This tastes like fall in one heavenly bite!
Apple Cupcakes
These apple cupcakes are good all year round with the satisfying cinnamon and apple mixture, but I especially enjoy these in the fall! All you need are a few simple items to whip these up:
- 2 cups all-purpose flour
- 1 and 1/4 cups granulated sugar
- 2 teaspoons baking soda
- 1 and 1/2 teaspoons baking powder
- 1 and 1/2 teaspoons cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1/4 teaspoon salt
- 1 cup vegetable or canola oil
- 4 large eggs, lightly beaten
- 1 and 1/2 cups packed, coarsely grated carrots (about 3 medium)
- 1 and 1/2 cups packed coarsely grated tart apples, such as Granny Smith (about 2 medium)
- 1 cup coarsely chopped pecans (or walnuts)
Preheat oven to 350°F and place the rack in the center of the oven. Place paper cupcake liners in 24 muffin tins.
Apple Cupcake Recipe
Make the batter in a large bowl by mixing together the flour, granulated sugar, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt. Whisk in the oil and eggs. Finally, stir in the carrots, apples, and pecans (optional).

Spoon the batter into the paper cups, three quarters of the way to the top.
Apple Carrot Muffins
Bake the apple cake at 350°F for 20 to 25 minutes or until a toothpick inserted in the middle comes out clean. You can serve these warm without any filling or topping as apple carrot muffins for breakfast. But if you are going to elevate these apple carrot cupcakes with a decadent carmel filling and creamy mascarpon frosting, let them cool completely before moving on to the next step.

My girls and I have been enjoying watching baking shows together. I love seeing all the different flavor combinations they create and the beauty of each edible work of art! I had never heard of a filled cupcake before the baking shows, but we decided to try it. Oh-my-word, it is amazing. The filling not only adds an extra layer of flavor to compliment your cupcakes, but it keeps and makes the cup cakes extra moist. Plus I love that unline frosting which sometimes is gone before I get to the last bite, the filling goes almost all the way down so you taste the yummy inside all the way to the last bite. You’ve got to try this!
Caramel Filling recipe
This carmel recipe is so yummy and rich, but you put so little in each cupcake it isn’t too rich. Besites being so tasty, it is such a fun surprise when people bite into the cupcake as they can’t see it before they take a bite. You will need the following matterials:
- 1 cup granulated sugar, I use extra fine for a quicker easier melting
- 6 tablespoons unsalted butter, I use organic
- 1/2 cup heavy cream, I use organic
- 1 teaspoon salt, or less if you don’t like your carmel lightly salted
Carmel Filling for Cupcakes
Heat 1 cup granulated sugar in a saucepan over medium heat, stirring constantly with a rubber spatula until the sugar melts and becomes amber in color. It takes about 5-7 minutes, but make sure not to burn it. When the sugar is melted, add 6 tablespoons unsalted butter. Constantly stir the mixture while the butter melts and mixes together with the sugar. As soon as the butter is incorporated, stir in ½ cup heavy cream. The mixture will bubble because of the temperature difference. Continue to stir all the time. When the sauce is the right consistency and the color, remove it from the heat and add some salt (about a teaspoon). Cool until just about room temperature.
Carmel Filling for Cupcakes
Core out the middle of a cupcake, leaving some at the bottom.
Apple cinnamon cupcakes
Fill the hole with a little less than 1 tablespoon of your carmel filling. Just fill until even with the top cupcake sides.
NOTE: The pictured images have warm filling which gives you a more gooey, moist filled cupcake. If you allow it to cool completely BEFORE spoon in it will make a soft, but solid carmel spot in the middle of the cupcake.
Mascarpone frosting
Never tried mascarpone cheese? It’s not really a common cheese to eat as it is very mild in flavor, more mild than cream cheese. The reason it is the perfect choice for this recipe is the carmel filling is so sweet you really need something to balance that. This not-too-sweet frosting does the trick beautifully while blending with the apple and cinnamon in a very satisfying and delicious way! Ready to try it?

You can spread the frosting or pipe it for a more elegant look.
Mascarpone icing
We are going to whip up a small batch of creamy, fluffy mascarpone icing to just add a pretty white swirl to each cupcake. All you need are a few simple ingredients:
- 8 ounces mascarpone cheese
- 1 cup powdered sugar
- 1 cup heavy whipping cream
- 1/2 teaspoon almond extract
- 1 Tablespoon vanilla extract
Frosting al mascarpone
Place the mascarpone in a medium bowl and start beating on medium speed. While beating, add the almond extract and vanilla followed by the powdered sugar. Scrape the sides of the bowl and continue beating until light and fluffy. Slowly add the whipping cream and beat on high until the frosting becomes light and fluffy, about 1-3 minutes. DO NOT OVERMIX as it will cause the frosting to curdle.

Now frost each of your cupcakes with a small dollup of mascarpone frosting.

These cupcakes are perfect for September as a taste of fall! They are moist with a lovely apple and cinnamon flavor that pairs so beautifully with the carmel sauce inserted in the core. The light, fluffy mascarpone frosting is nice and subtle, balancing out the rich caramel sauce! If you prefer, you can make a simple buttercream frosting, but this one pais so beautifully!

- 6 Tablespoons unsalted butter
- 1/2 cup heavy cream
- 1 teaspoon salt
Mascarpon Filling (optional)
- 8 ounces mascarpone cheese
- 1 cup powdered sugar
- 1 cup heavy whipping cream
- 1/2 teaspoon almond extract
- 1 Tablespoon vanilla extract

Place the mascarpone in a bowl and start beating on medium speed. While beating, add the almond extract and vanilla followed by the powdered sugar. Scrape sides and continue beating until light and fluffy. With the mixer running on high speed, slowly add the whipping cream until the frosting becomes light and fluffy, about 1-3 minutes. DO NOT OVERMIX as it will cause the frosting to curdle. Spread onto cake or cupcakes.
