Healthy Pancake with Almond Flour for extra protein - This easy-to-make pancake recipe is not only yummy, but super healthy too!

Pancakes are a childhood classic!

We LOVE pancakes!

Here is a yummy recipe that quickly became our families our go-to recipe because all the extra protein kept us full and satisfied all day long!

Healthy Pancakes with Almond Flour

Depending on your health goals and feelings about organic ingredients, artificial sweeteners, and fat in food you can make choices about the ingredients you put in. We used all organic, full fat ingredients with whole eggs and real maple syrup which produces the numbers on the upper end below. If you use fat free, egg whites, and stevia you will get the lowest numbers below:

use a food processort to smooth out cottage cheese

We mix up the entire pancake batter in a food processor.  Start with 1 cup of cottage cheese blended 20 seconds or so; until smooth.

add eggs

Now add 5 eggs or 1 cup egg whites and blend until combined.

add seasonings

Add a dash of vanilla extract, 2 teaspoons baking soda, and 1 Tablespoon pure maple syrup or Stevia.

add almond flour

Add 1 cup almond flour.

You are going to love this flour alternative. Not only is it low in carbohydrates and high in protein, but it adds a wonderful buttery nutty taste you’ll love!

blend and pour on hot griddle

Blend for the last time and you are left with this perfect pancake batter.
