We love getting the convenient pre-made barbeque pork from Costco and are always looking for a pulled pork recipe to mix it up. My family loves homemade pot pie so I thought, let’s make a barbecue style pot pie with the pulled pork. This could easily be done with chicken for an easy bbq chicken recipe or with beans and vegetables for a vegetarian version. For this pulled pork cornbread casserole you basically dump in prepared meat and top with cornbread, bake to perfection, and serve warm. Ta da! Super yummy, easy weekeday meal.

All you need to make this throw together dinner are a few simple ingredients:
- shredded barbeque pork/chicken/or beef
- corn muffin mix
- butter (for mix)
- milk (for mix)
- Mexican corn, drained
Bbq chicken cornbread casserole
Heat oven to 400 F. Now divide 18 ounces of prepared (hot or cold) barbecue chicken / pork / beans/ or vegetables among 4 small oven-proof dishes or one 8×8 pan. We love using the convenient pre-made version from costco, but this could be a convenient leftover meal too.
