Pumpkin Roll Recipe
All you need to whip up this yummy pumpkin treat are a few simple ingredients:
- eggs
- sugar
- canned pumpkin
- lemon juice
- all purpose flour
- cinnamon
- baking powder
- ground ginger
- ground nutmeg
- salt
- chopped walnuts
- powdered sugar
- cream cheese, softened
- butter, softened
- vanilla extract
Easy Pumpkin Roll Recipe
Preheat the oven to 375 F. Now grease & flour a 15x10x1” jelly roll baking pan. I also like to line with parchement paper for ease of removal. Set aside.
In a large bowl beat 3 eggs with electric mixer on high speed for 5 minutes.
Gradually beat in 1 cup sugar. Now stir in 2/3 cup pumpkin and 1 teaspoon lemon juice.
Pumpkin Roll Cake Recipe
In medium bowl stir together 3/4 cup flour, 2 teaspoon cinnamon, 1 teaspoon baking powder, 1 teaspoon ginger, 1/2 teaspoon nutmeg, and 1/4 teaspoon salt. Fold into pumpkin mixture and mix well.

Spread cake in prepared pan and sprinkle with chopped walnuts. Bake at 375 F for 15 minutes or until cake springs back when lightly touched. Do not overbake.

Immediately loosen edges of cake from pan and turn cake out onto a towel sprinkled with powdered sugar. Starting from a short side, roll up the warm wake and the powdered sugar-coated towel together and let the cake cool.

For filling, in a medium bowl combine 1 cup powdered sugar, 8 ounces softened cream cheese, 1/4 cup butter, and 1 teaspoon vanilla. Beat with an electric mixer on low speed until smooth.
Carefully unroll the cooled cake & towel. Spread the filling over the cake, leaving a 1” border around the edges. Starting from a short side, roll up the cake and filling.
Cover and refrigerate. To serve, sprinkle with additional powdered sugar; cut into slices.
