Calling all cookie lovers! Who can resist a delicious cookie? Today, I’m excited to share one of my absolute favorites: Pastel Mint Chocolate Cookies!
These beauties are not just tasty but also super fun to make. Picture this: melt-in-your-mouth chocolate cookies topped with colorful green, yellow, and pink mints. They are delightfully soft and bursting with minty goodness! Originally you had to buy the meltaway mints from Fannie Mae but now they sell generic versions on Amazon that taste just as good and are cheaper!
This recipe has a special place in my heart because my mother-in-law makes them, and they’ve become a cherished family tradition. I can’t wait for you to try them out! I hope your family loves them as much as ours does!

meltaway chocolate cookies
All you need to make these delicious mint cookies are a few simple ingredients:
- all purpose flour
- baking soda
- brown sugar
- butter
- water
- vanilla extract
- semisweet chocolate chips
- egg
- pastel cream mints
Chocolate meltaway cookies
In a medium pan heat and stir brown sugar, butter, and water over low heat until butter is melted.
Add chocolate chips. Stir until chocolate is melted. Pour into large bowl and let stand 10-15 minutes, or until cool.

Beat egg into cooled mixture.
Now stir in flour and baking soda until well mixed – dought will be soft.
Cover and chill dough 2 hours. Dough will be firm.
While the dough is chilling, remove white non-parells from the mints. To do this, carefully use a knife and scrape the balls off or slice off the bottom part of the mint. Set aside.

Shape into small 1″ balls and place them 2″ apart on an ungreased cookie sheet. I like to line the baking sheet with parchment paper to make clean-up a breeze.
Bake at 350 F for 8 minutes.
Remove and top each cookie with a mint. Return to oven and bake 2 minutes longer. This makes the mint melty.

Immediately use a knife to spread the melty mint to cover the entire top of the cookie with just a little chocolate border. Make sure to use a new knife between colors.
Place cookies on a cooling rack until completely cooled and mint has once again hardened. Store in airtigh container for up to a week.

My kids like to eat the cookies while they are still warm and the mint is melty.
Personally, I love the the texture once they’ve completely cooled and the mint has hardened again. You bite into a soft chewy chocolate cookie and get a firm, but soft mint layer on the top.
The cookies are mint chocolate, but neither flavor is too rich or overpowering. It is a light mesh of two perfectly blanaced flavors.

My mother-in-law always made these for Christmas, perhaps because the added cost of the mint made them special. And while there is nothing inherritantly holiday about these treats, they are so pretty I love adding them to my Christmas cookie trays!
One of our family traditions is that we take plates of cookies to our neighbors in December. It allows me to do lots of baking and get a huge variety of 15 or so favorite homemade cookies, but not have too many cookies to eat ourselves.
My neighbors tell me they always look forward to our beautiful mint chocolate cookies the most!

Pretty Pastel Mint Chocolate Cookies Recipe
