Cranberry white chocolate cake
All you need to whip up this elegant cranberry white chocolate cake are a few simple ingredients:

Mix together a white cake mix using the package instructions! For mine I added 3 eggs, 1/2 cup of canola oil, and 1 cup of water. Now gently fold in chopped cranberries and mini chocolate chips.
Coat two 8″ or 9″ round baking pans well with cooking spray for easy release. Pour your delicious batter into cake pans.

Bake your cake layers at 350°F for 25 to 30 minutes, or until they’re beautifully golden brown and spring back when touched. Once they’re done, let them cool completely before frosting!
While your cakes are cooling, it’s the perfect time to whip up some delicious frosting!
Grab your electric mixer and combine butter, cream cheese, powdered sugar, and vanilla until smooth and creamy. If your frosting is a little too thick, gently mix in 2 tablespoons of milk. If it still needs a little more looseness, add that 3rd tablespoon.

Make a simple syrup. In a medium saucepan set over medium heat, bring the 3/4 cup water and 1 cup of sugar to a simmer, whisking until the sugar has dissolved. Remove the pan from heat and allow to cool for 5 minutes.
Now put the cranberries, cooled simple syrup, and 1/2 cup sugar into a small zip loc bag and shake until the berries are coated with sugar.
