1white cake mixplus eggs and oil to make mix into cake per package instructions
1cupdried cranberrieschopped
1cupmini chocolate chipswhite, semi-sweet, etc.
Frosting
1/2cupbuttersoftened
8ozcream cheese
1lbpowdered sugar~ 3 3/4 cup
1teaspoonvanilla extract
2-3Tablespoonsmilk
Sugared Cranberries
1cupcranberries
1 1/2cupgranulated sugardivided
greenerygarnish
Instructions
Bake Cake
Mix together a yellow cake mix using the package instructions! For mine I added 3 eggs, 1/2 cup of canola oil, and 1 cup of water. Now gently fold in chopped cranberries and mini chocolate chips.
Coat two 8″ or 9″ round baking pans well with cooking spray for easy release. Pour your delicious batter into cake pans
Bake your cake layers at 350°F for 25 to 30 minutes, or until they’re beautifully golden brown and spring back when touched. Once they’re done, let them cool completely before frosting!
Frosting
While your cakes are cooling, it’s the perfect time to whip up some delicious frosting!Grab your electric mixer and combine butter, cream cheese, powdered sugar, and vanilla until smooth and creamy. If your frosting is a little too thick, gently mix in 2 tablespoons of milk. If it still needs a little more looseness, add that 3rd tablespoon
Start by spreading a generous layer of frosting on your cooled cake. Once that’s done, stack your next cake on top and give it a lavish coat of frosting all around—top and sides
Sugared Cranberries
Make a simple syrup. In a medium saucepan set over medium heat, bring the 3/4 cup water and 1 cup of sugar to a simmer, whisking until the sugar has dissolved. Remove the pan from heat and allow to cool for 5 minutes.Now put the cranberries, cooled simple syrup, and 1/2 cup sugar into a small zip loc bag and shake until the berries are coated with sugar.
Decorate your gorgeous frosted cake by artfully placing fresh cranberries on top, accented with a touch of greenery. I used sprigs of pine from the back of our Christmas tree for a festive touch!
