October Meal Planning

In October our home gardens are being closed up. The menus will incorporate seasonal items like pumpkins and gourds and lots of warm-you-up soups.   Our meal plan feeds our family of 5.  So for all you busy moms out there – dinner is served {and you didn’t even have to plan it!}

Week 1:





Monday Fruit & Granola (use coconut oil) Avocado Egg Salad Sandwich with
Classic Tortilla Soup**
with Corn Tortillas
Tuesday Oatmeal w/ fruit Leftover Tortilla Soup
with corn tortillas
Pumpkin & Cashew Stir Fry**
Brown Rice
string cheese
Wednesday Yogurt & Fruit English Muffin Pizza (w/ tomato sauce, cheese & olives) Slow Cooker Pork Tacos
+ tortilla shells
Thursday Blueberry Muffin baked beans & fresh bread** Grilled chicken
acorn squash
Green Beans
Friday Farmer Eggs** with 2-3 potatoes, 1 pepper  & 2 eggs per person)
with juice
Baked potato with cheese, sour cream, and broccoli Peanut Linguini**
bell pepper with hummus
*only eat 1/2 hummus
Saturday Pumpkin Waffles** with maple syrup leftovers Cheese & Veggie Pizza

*save 1 pizza crust for Monday

*Granola makes 20-24 servings – save the rest for other days on menu (keeps in air tight container for 2-3 weeks)

Week 2:

Monday Fruit & Granola Calzone (using saved crust) Baked Potato Soup bell pepper with humus (leftover)
Tuesday Oatmeal with fruit Leftover Potato Soup
Breakfast burrito (homemade tortillassave extras for tomorrow, eggs & cheese & peppers) fruit
Wednesday Yogurt & Fruit Quesadilla (cheese or PB & choc chips) Angel Hair Brushetta Peanut Honey Power balls
Thursday Banana Bread Fish Sticks
carrots & broccoli w/ranch
Stir Fry (Vegetarian with 1 cup nuts) fruit
Friday Fried Eggs + Fruit Crackers & Cheese (opt. summer sausage)
+ grapes
Eggplant Parmesan, pasta & sauce popcorn
Saturday pancakes leftover Cheese & Veggie Pizza cucumber slices
Sunday Smoothie Tweaked Creamed Chicken & Healthier Biscuits** Mac & Cheese

Week 3:

Wednesday Yogurt & Fruit Cobb Salad Pumpkin – Apple Soup** top w/ pine nuts
Thursday Sweet Potato Muffins *use coconut oil and 1/2 sugar Leftover Soup
Bread top w/ pine nuts
Egg in a whole and fruit Granola
Friday Scrambled Eggs
Potatoes & Green Peppers
refried bean burritos
+ tortilla shells (today only)
meatloaf (use ground turkey), broccoli, mashed potatoes popcorn

First off, because I know you are going to ask, where is the Menu {free} printable?  I know I usually have free printables for everything! But I think it will be more helpful to you if you just read the menu {this post} on your smart phone, ipad, or computer. All the recipes are hyperlinked for your convenience! {This is how I am cooking now too}

You can also pull up your shopping list from your smart phone, but I know sometimes it is easier to print this off to add your own notes {things you already have, add’l household supplies you need, etc.} Each weekly shopping list contains everything you need to make the recipes that week.  Easy Peasy!
