1lbwhole pork tenderloin
1lime, zested
1/2cuplime juicefrom lime (s) or bottle
1/4cuphoney
1 1/2teaspoonkosher salt
3clovesgarlic, diced
1chipotle pepper with 1 Tablespoon of adobo sauce
1Tablespoonfresh cilantro, chopped
Instructions
Put lime zest, juice, honey, salt, garlic, cilantro, and chipotle pepper and adobo sauce in ziplock bag with a 1lb, trimmed pork tenderloin. Seal and squish the marinade around to cover. Allow the meat to marinade for 6 hours to overnight.
Bring the pork to room temperature while heating your grill to medium high. Grill pork tenderloin on medium high for 12-15 minutes, turning 2-3 times. Use a digital thermometer to make sure the internal temperature reaches 140 F.
Remove the meat from the grill and put on a sheet of foil and wrap with foil and allow the meat to rest for 10 minutes. This allows the meat to absorb the juices; it will also continue to go up a couple of degrees. After 10 minutes, remove from the foil and slice in uniform 1/2" slices on cutting board. Serve hot garnished with additional cilantro.
