Summer Sunshine Cake – Yellow Cake Mix with Pineapple, Orange, and Pudding Frosting!

Start by zesting the orange and setting the peel aside. Next, cut the orange in half and squeeze out the juice into a 1-cup measuring cup. If you don’t have quite enough juice to fill the cup, just top it off with water until it reaches the one-cup mark. Set aside.Spoon half of the pineapple from the can into a stainer, and let the juice drain off. Save the rest of the juice and pineapple in the can and set it aside
Using an electric mixer to combine the cake batter with 1 cup of juice (and water), 3 eggs, and 1/2 cup of canola oil. Mix on medium speed for about 2 minutes until it’s nice and smooth. Finally, gently fold in the drained pineapple.
Pour the batter into a greased 9×13″ baking dish or a 10″ springform pan. Bake in a preheated oven at 350°F for 25 to 30 minutes, or until the top is lightly golden and the cake feels firm to the touch.

After generously spreading the frosting over your cake, pop it in the fridge for 20 to 30 minutes
