Ingredients
1cupgranulated sugardivided
1 1/2cupheavy cream
1 1/2cupwhole milk
2cupspeachespitted, skin removed, sliced
1Tablespoonlemon juice
5egg yolks
1teaspoonvanilla extract
Instructions
In medium saucepan combine 1/2 cup of white sugar, 1 1/2 cup heavy cream, and 1 1/2 cup whole milk. Stir and heat over medium heat.
Meanwhile, in a separate bowl put 2 cups fresh, ripe peaches pitted, skin removed, and sliced OR 16 oz can of firestone peaches ( liquid drained) in a bowl. Add 1 tablespoon lemon juice and 1/2 cup sugar.
Now in a third bowl or quart measuring cup put 1/2 cup white sugar and 5 egg yolks.
When the milk mixture in the saucepan is almost at a boil (175 F), ladle a scoop of warm milk mixture in the egg mixture and stir. Repeat. Now pour the egg mixture into the saucepan and mix quickly. (If you skip this step you could end up with some scrambled egg bits).
Continue heating over medium heat until the mixutre reaches abut 175 F again, or just before boiling.
Remove from heat and add 1 teaspoon vanilla extract then add peaches to the warm milk mixture. Put your milk and peach mixture in bowl, cover, and put in the freezer for 1 hour or fridge for 4 hours to allow the mixture to cool before making ice cream.
When you are ready, pour the cooled ice cream mixture in an ice cream maker for about 1 hour for delicious, homemade peach ice cream.
