Ingredients
1tablespooncoconut oil
1mediumyellow onion, diced
5clovesgarlic, minced
1mediumSerrano Chile, sliced into rings (remove seeds for less heat)
4cupsbrown rice, cooked
16ounce canpineapple chunks, drained
1cuppeas, thawed
1/2cupcashews
1/3cupcilantro, chopped
1/3cupsoy sauce, low-sodium
1/3cupvegetable stock
1/4cupmolasses
2teaspoonsginger
2teaspoonsarrowroot powder (optional to help thicken)
Instructions
Heat coconut oil in large skillet over high heat. Add onion, garlic, and chile and stir fry for 4 minutes. Add 2 tablespoons water and add pineapple, peas, rice, and cashews and cook over medium heat until heated thoroughly; about 4 minutes. Meanwhile, mix together the sauce and pour over rice and continue cooking until heated thoroughly. Serve warm or leftover in kids lunches cold.
