Instructions
In large pot over medium-high heat put 1 Tablespoon olive oil and 1 lb chicken that has been cut into chunks; sprinkle with salt & pepper. Cook 5-7 minutes, or until the outside is no longer pink.
Add chopped onion, carrots, and garlic. Now add the spices: paprika, cumin, marjoram, and bay leaf
Cook 5 minutes to let the ingredients all mesh together while allowing the vegetables to tenderize slightly.
Add 1 TAB oil and flour and cook for 1-2 minutes to get the flour to toast. Now add the cooking wine (or additional stock) chicken stock, and crushed tomatoes; stir well.
Cook for 20 minutes to allow the flavors to combine and finish cooking the vegetables. While it is simmering, make pasta so it is al dente
Now you have 2 options. You can either add the pasta into the soup just before serving. This makes it look more soup-like and covers the pasta with the yummy paprika soup. The other options is to serve a scoop of pasta and then top it with a ladle or two of soup. This is good if you think you will have leftovers so the pasta doesn’t get too soft or if you have picky eaters who like to think of the soup as a sauce rather than soup. Either way – it is delicious!
