Ingredients
For the Filling
1stickbuttermelted
1cupdark corn syrup
1cupbrown sugar
4largeeggs
1Tablespoonvanilla extract
3/4teaspoonsalt
3cupspecan halves
For the Crust
2sticksbuttersoftened
3/4cupsugargranulated
1/4teaspoonsalt
2cupsall-purpose flour
Instructions
Preheat the oven to 350°F. Spray the bottom and sides of a 13x9-inch baking pan with baking spray. Line the pan with parchment paper letting the excess extend over the edges of the pan - this allows it to pop out easily for cutting into bars.
Melt butter in sauce pan and cook over medium about 5 minutes or until the butter smells nutty, do not get it too dark! Remove from heat and whisk in the sugar and salt. Add the flour and stir until it is fully moistened. Press the crust evenly into the bottom of the prepared baking pan, making sure to get all the way to all the edges of the pan. Bake for 15 minutes.
While the crust is baking, in a large bowl whisk together melted butter, corn syrup, sugar, eggs, vanilla extract, and salt until smooth. Carefully stir in the pecan halves.
Pour the pecan filling over the baked crust and bake for an additional 30 to 35 minutes or until the topping is puffed and set. When done, it should not wiggle. Let the bars cool completely in the pan. Now, use the excess parchment to lift the bars out of the pan. Cut into squares to serve. Yum!
