1/4teaspooncayenne pepper
3/4teaspoonground paprika
1cupheavy cream
1cupwater
1/4cupcilantrochopped
3cupscooked jasmine rice
Instructions
Start by melting some butter in a spacious, deep skillet over medium heat. Toss in the chopped onion and a pinch of salt. Sauté, stirring occasionally, until the onions are nice and soft—about 7 minutes
Stir in the tomato paste. Cook the mixture, stirring constantly, for about 4 to 5 minutes until it becomes rich and dark
Add some chili and ginger to the pan, stirring them together until the aroma fills the air and the tomato paste begins to caramelize slightly on the bottom—about 1 minute
Add in those nutritious chickpeas along with baking soda to the pan with your onion and tomato paste mixture. Give it a good stir to combine all those delicious flavors
Add a burst of flavor by mixing in garam masala, cumin, and chili powder! Cook this aromatic blend while stirring frequently for about 30 seconds, or until the spices become fragrant and beautifully combined
Add in the cream, salt, and water. Bring the mixture to a simmer over medium-high heat. Once it’s simmering, reduce the heat to low and let it continue to simmer, stirring occasionally. Cook until the sauce reduces and thickens, about 10 to 15 minutes
Serve up deliciousness by dividing the cooked rice into bowls or plates. Next, generously spoon the flavorful chickpea mixture either on top or alongside the rice. And don’t forget the finishing touch: sprinkle fresh cilantro over the chickpeas. This isn’t just a garnish—it takes this Indian curry dish to the next level of flavor!
