Ingredients
1/4cupall purpose flour
1/2teaspoonsalt
1/4teaspoonground pepper
1/2teaspoondried oregano
4chicken breaststrimmed
4Tablespoonsolive oil
4Tablespoonsbutter
1cupmushroomssliced
1/2cupMarsala wine
1/4cupSherry wine
Instructions
In shallow bowl mix together flour, salt, pepper, and oregano. Coat chicken pieces in flour mixture
In a large skillet: melt butter in oil over medium heat, place chicken and lightly brown on both sides
Add mushrooms and toss to coat mushrooms with butter and oil. Pour marsala wine & sherry over top. Cover skillet and simmer chicken about 10 minutes (the alcohol cooks off). Make sure internal tempearture of chicken is at 165 F before serving.
