Instructions
Whip up a delicious peach marinade by blending one ripe peach with honey, olive oil, and fresh lemon juice. Let your pork soak in this fruity goodness for 30 minutes before grilling
In the meantime, let’s whip up a delicious peach salsa! Chop up the remaining peach, avocado, onion, serrano chili, and toss in some sugar, salt, pepper, and fresh parsley. Chill the peach salsa to enhance its deliciousness until you’re ready to serve.
Cook those pork chops to perfection! Grill them over medium heat for about 10 minutes, flipping once to ensure even cooking. Make sure they reach an internal temperature of 145°F for juicy, tender results. Once done, let them rest covered with foil for 5 minutes before serving.
Serve each pork chop with a generous serving of peach salsa. I like to top mine with some cilantro.
Notes
You may want to serve the pork chops on a bed of quinoa, alongside a side salad, or with a side of green beans
