Ingredients
3cupsall-purpose flour
4teaspoonsbaking powder
2teaspoonsground cinnamon
2teaspoonsground ginger
1/2teaspoonground nutmeg
1/2 teaspoonsalt
4largeeggs
2/3cupbrown sugarpacked
1cupcanned pumpkin puree
1 1/4cupmilk(I use organic whole milk)
1/2cupmolasses
1stickbutter(1/2 cup)
Instructions
Preheat waffle iron.
In a large bowl combine the dry ingredients: flour, baking powder, cinnamon, ginger, nutmeg and salt.
In a medium bowl combine the wet ingredients by beating the eggs and brown sugar until fluffy. Now carefully beat in the pumpkin, milk, molasses and melted butter.
Stir the wet ingredients intothe dry ones until just moist. Do not overstir the waffle batter.
Laddle waffle batter into irons and bake according to manufactures directions. Serve hot waffles with choice of toppings.
