1stickbuttersoftened
3/4cupgranulated sugar
1teaspoonvanilla
1largeegg
2cupsflour
2teaspoonsbaking powder
1pinchsalt
3/4cupmilk
Cinnamon Filling
3tablespoonsbutter, softened
1tablespooncinnamon
1/2cupall purpose flour
1/2cupbrown sugarpacked
Streusal Topping
5tablespoonsbutter
1/2cupflour
1/2cupquick cook oats
1/2cupbrown sugar, packed
1tablespooncinnamon
Instructions
Preheat oven to 350 F
Make the cake by whipping the butter, vanilla, egg, and sugar. Add the dry ingredients. Pour in the milk and combine. Pour half of the batter in a buttered, 9x9 baking dish.
Mix the cinnamon filling ingredients and sprinkle over the cake batter.
Pour the remaining cake batter over the filling and smooth with a spoon.
In the empty filling bowl, mix the streussal ingredients until well combined. Sprinkle the mixture on top of cake.
Bake the coffee cake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Let the breakfast cake sit to cool slightly before cutting and serving.
