Start by browning 2 pounds of ground beef in a large skillet! Once it’s nicely browned, be sure to drain any excess fat.
Next up, stir in 1 cup of chopped onions, a 28 oz can o diced tomatoes, 1 cup of sliced black olives, 2 tablespoons of chili powder, and 1 1/2 teaspoons of salt.Cook until the onion is tender and the flavors have had a chance to mingle!
In a medium bowl, mix together 1 ½ cups of yellow cornmeal, ½ cup of flour, 1 teaspoon of salt, and 1 teaspoon of baking powder. Next, pour in 2 cups of hot water and 4 tablespoons of melted butter. Stir until everything is combined and the mixture is smooth, but be careful not to overmix.
Add in 2 cups of delicious shredded cheddar cheese and mix it all together.
Pour cornmeal into a greased 9×13-inch pan and spread it evenly to create a delicious bottom layer for your beef casserole.
Spoon the delicious meat mixture into your baking dish and gently press it down to even it out. Next, sprinkle the remaining cup of shredded cheddar cheese on top for that perfect melty goodness. Bake in a preheated oven at 400°F for 25 minutes until golden and bubbly. Serve warm.
