Ingredients
3ozlemon-flavored gelatin
1cupboiling water
1cup7-up
1largebananasliced
1cupmini marshmallows
8ozcrushed pineappledrained - reserve juice
1Tablespoonbutter
1Tablespoonall purpose flour
1 largeeggbeaten
1/4cupgranulated sugar
1/2cupreserved pinapple juiceadd water if you to make 1/2 cup
8ozwhipped toppingCool Whip, Tru Whip, etc.
Instructions
In a large mixing bowl, combine 3 oz gelatin with 1 cup boiling water and stir until fully dissolved.
Add 1 cup of 7-up to the lemon jello mixture. It will fizz a little
Stir in 1 large banana that has been sliced, 1 cup mini marshmallows, and 8 oz of crushed pinneaple that has been drained – reserve the liqiud
Pour the jello mixture into a 9×13 inch serving dish and pop it in the fridge. Let it chill until it’s perfectly firm
Meanwhile, in a medium saucepan over low heat, melt 1 tablespoon butter. Add 1 tablespoon flour and stir with a whisk to make a paste; stir for 30 seconds until it is ever so lightly golden brown and has a nutty smell.Add 1 egg that has been beaten, 1/4 cup granulated sugar, and reserved 1/2 cup pineapple juice (add water to make it 1/2 cup if needed).Heat the misture to boiling; cook and stir 1 minute.Cool slightly then fold in 8 oz whipped topping and pour over chilled salad and spread evenly
Return to refrigerator to set until it is time to serve
