1Tablespoonexta virgin Olive Oil
2cupsAll Purpose Flour
1cupSemolina Flour for the authentic Italian taste
Mix all ingredients together.I mixed mine in a bread machine because it was handy. But you could easily just throw your ingredients in a mixer. If you are using a breach machine just select dough cycle and press start. Set a time for 10 minutes. (this dough is not suitable for a delay timer)
Form the dough into a ball and wrap in plastic wrap. Let rest at room temperature for 30 minutes. HINT: The dough can also be refrigerated for up to 3 days.
To roll out your pasta you have a couple choices. Your can use a rolling pin and pizza slicer to cut pasta by hand on a floured surface. Or you can use a kitchen gadget to speed up the process and get more uniform pasta by using a hand crank pasta maker . This actually goes really quickly!
You can dry your pasta by laying it on a clean counter or surface covered with parchment paper or using a pasta drying rack.Let the pasta air dry at least 20 minutes before cooking or freezing.
Now that your pasta had dried, just bring a pot of water to a boil. Add 1 TAB olive oil and 1 1/2 teas salt to season the pasta. Now boil pasta for 2-3 minutes, strain, and serve.
