Breakfast Apple Cake Recipe

- 4 large eggs
- 3/4 cup canola oil
- 1 1/2 cup granulated sugar
- 2 teaspoons cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 1/4 cups flour
- 4 medium apples, peeled and chopped.
- 1/4 cup flour
- 1/2 cup brown sugar
- 1/2 cup quick cook oats
- 1 teaspoon cinnamon
- 4 tablespoons butter, softened
In a large bowl mix eggs and oil.
Next, mix together the sugar, cinnamon, baking soda, salt, and vanilla extract.
Now add in flour and mix until thoroughly mixed.
Now peel and chop 4 apples (we used Fuji) and mix into apple cake batter.
Make streusel by mixing together flour, brown sugar, oats, cinnamon, and butter
Pour into one greased 9x13 pan or two square pans.
Now sprinkle with the following streusel topping and bake 350 F for 50-60 minutes.
