Ingredients

  • 3 cups flour
  • 1 cup cornmeal
  • 1 1/4 cup lukewarm water
  • 1 teaspoon sugar or honey
  • 1 package yeast (2 1/4 teas)
  • 1/4 cup milk (or water)
  • 2 tablespoons olive oil
  • 8-12 ounces taco sauce
  • 1 pound ground beef
  • 1 package taco seasoning (or make your own)
  • 2 cups Mexican cheese
  • 2 cups lettuce, shredded
  • 1 bag Doritos
  • sour cream (optional)
  • salsa or diced tomatoes

Instructions

  • In a bowl mix 1 1/4 cup lukewarm water, 1 teas sugar, and 2 1/4 teas yeast with a fork. Let it rest for about 5 minutes to activate the yeast; you’ll see it “puff up”
  • In a mixing bowl mix the starter, flour, cornmeal, milk, and olive oil with a dough hook until blended. Cover with bowl with plastic wrap and put it somewhere warm to rise for 30 minutes.
  • Meanwhile cook beef until cooked thoroughly. Add taco seasoning and 2/3 cup water and simmer 5 minutes.
We make our own taco seasoning by combining: 1 tablespoon chili powder, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, 1/4 teaspoon crushed red pepper flakes, 1/4 teaspoon dried oregano, 1/2 teaspoon paprika, 1 teaspoon ground cumin, 1 teaspoon sea salt, and 1 teaspoon black pepper
  • When the pizza dough is ready, increase oven to 450 F and spread the dough over a large pizza pan that has been sprinkled with cornmeal. . Roll out to reach all the edges.
  • Top pizza with taco sauce, ground beef, and mexi cheese. Bake for 12-14 minutes.
  • Top pizza with doritos, lettuce, chopped tomatoes and sour cream.
HINT: Let everyone top their own pizza so that any leftover pizza (if there is any) can be topped fresh.
