Hi! I’m so glad to be back, sharing another recipe with you this month. As I write this, we’re returning from a vacation at the lake (I’m actually in the car right this very minute, trying to entertain four kids on a 1,000 mile odyssey from Grandma’s back to our house. Wahoo!)


We go to the lake every summer. And every time we go, we try to do some fun, special desserts and treats. We usually make s’mores. We always hit the drive-in down the street for ice cream. And we almost always make our own ice cream while we’re there, too.


Homemade Ice Cream Recipe

I actually can’t take credit for this recipe. We had some delicious-looking peaches and strawberries we needed to use, and my husband is the one who incorporated them into this really, really good ice cream.

And since we were using what we had on-hand, he switched out heavy cream for whole milk...which makes the recipe a little healthier, too. The perfect end to a day of swimming and bike riding and playing on a warm day. Like many ice cream recipes, this one does contain raw eggs, and may not be good for pregnant/nursing women or babies.

Ingredients:

  • 3 c peaches, cut into chunks
  • 1 c sliced strawberries
  • 1 c sugar
  • 6 eggs
  • 4 c half and half
  • 2 c whole milk
  • 2 1/2 c sugar
  • 2 tsp vanilla

Directions:

Add the fruit and sugar to a 1-qt saucepan. Heat until just barely boiling, reduce heat and simmer for 30 min.


While the fruit mixture is simmering, wisk together eggs, half and half, milk, sugar, and vanilla in a bowl. Pour milk mixture and fruit sauce into your ice cream machine, and freeze according to your ice cream maker’s instructions.


Because you’re using whole milk rather than cream, the freezing time may be slightly longer than usual. If you don’t want to continue checking to see if it's done (like we do...um, every five minutes), you can put it in a freezer container and freeze it overnight for a delicious treat the next day.
