Thanksgiving Leftover: Turkey Pot Pie

Thanksgiving Dinner is coming up! That means a delicious feast and hopefully leftover turkey! My family loves our leftover turkey! Here is one of our family favorite Leftover Turkey Recipe for Turkey Pot Pie.

Thanksgiving Leftover Turkey

Last year my husband (the leftover king) decided we needed an 18lb turkey to feed our family of 5!  So we had wonderful turkey sandwiches for 5 meals. Then we enjoyed our Amazing Thanksgiving Leftover Soup for 3 more meals.  But I still had some turkey left so I decided to make a Turkey Pot Pie! It was so incredibly delicious I just had to share it with you too!

Yummy Turkey Pot Pie Recipe

In a large skillet melt 4 TAB butter and cook 1 medium onion diced, 3 stalks celery diced, and 3 carrots diced until slightly soft (about 5-7 minutes) over medium-high heat.


Next, add 4 Tab flour and stir over medium-high heat for a 2 minutes. (The flour will help thicken your sauce. You need to brown it slightly to take away the pasty taste)

add potatoes, seasonings, and simmer

Over low heat, add 2 cups water + 2 teas chicken granules {or 2 cups turkey broth}, 1 teas rosemary, 1 teas thyme, and 1 teas ground mustard to the pan.  Stir until well blended. Add 1 and 1/2 cups diced potatoes (2-3 potatoes) and allow to simmer over low heat until veggies are soft, about 12 minutes. {Meanwhile, make your crust} After 12 minutes add about 2 cups of diced/shredded turkey and 1/2- 1 cup milk or half and half; stir and simmer over low a couple more minutes.

Flaky Homemade Crust for Turkey Pot PIe

1 Large Pot Pie or Individual Turkey Pot Pies

You can either buy a store bought crust for convenience or easily make your own – homemade pie recipe. You will need a 2 crust recipe. Now  you can either make a traditional pot pie in a large pie pan or make individual pot pies in small pie or individual ramekins (that is what we like to do as it give everyone a better crust to filling ratio and is easier to serve!) The recipe makes enough for 1 large or 10 individual ramekins ~ we fill 5 individual and save the rest to go over potatoes or noodles)

Put crust in the bottom of each dish and bake at 425 F preheated oven for 6 minutes. (This will help insure you don’t get a mushy, pasty flavor!)

While your crust is cooking cut out the tops using a reserved dish to cut just  little bigger than the pan/dish.

Use a ladle to fill the crust. Cut slits in the tops you cut out (to allow the steam to escape) and lay on top of each pan. Put back in the oven at 425 for about 20 minutes. Serve warm!
